This is great; as a Texan, I was taught this in Texas history classes. Then, I benefitted from my grandfather working for one of the state's largest meat-packing plants. In the early '60s, he took me to the slaughterhouse on Saturdays. What I saw there has stuck with me for decades. It was all educational. Great job on the series.
